Spread the bread crumbs in a 4-inch-wide strip starting at the short end of the pastry. Leave a 2-inch border along the edges.

Spread half the apple mixture on the bread crumbs. Sprinkle 1/3 cup sugar over the fruit.

Place the pastry’s short edge over the filling.

Roll the dough like a jelly roll by tucking the sides. To roll the pastry, use a towel.
