A light, crunchy Asian chicken Salad that can be served with an Asian vinaigrette. This salad is healthy, light and full of delicious flavour. For the perfect combination of flavour and texture, top it with crispy wonton crackers.

This chicken salad is my absolute favourite. It’s light and satisfying. Teriyaki chicken can be marinated and then grilled or griddled on an outdoor grill. The chicken is then sliced. You get juicy, flavorful chicken.

The Ingredients

For the chicken, I used chicken legs for succulent meat, which was marinated with Teriyaki sauce. The chicken can be served hot or cold as a salad. You can use chicken breasts, but chicken thighs are more fattening, so they are super tender and juicy.

Romaine lettuce– The Romaine lettuce heart gives this salad its great flavour and crunch. Shredded cabbage can be substituted if you don’t want the lettuce to get soggy if you make this salad ahead. For colour, I like to add shredded Red Cabbage.

Vegetables Crunchy red bell peppers, carrots and green onions.

Toppings I made my own wonton chips but you can also purchase them. For an extra crunch, I like to add roasted cashews!

Salad dressing– This is a simple Asian-inspired salad dressing. You can find the dressing recipes here. This dressing is much more delicious than the ones you can buy at the grocery store and is easy to make.

How to make Asian Chicken Salad

Chop the vegetables! Chop the romaine hearts and shred the red cabbage. Cut the cilantro into small pieces. Slice or julienne carrots (I used this prep Julienne peeler). The Asian chopped salad is a laborious task that requires a lot of cutting, but the end result is worth it!

Toss the vegetables and chicken in a large bowl. Add the dressing to the bowl. Just before serving, top with cashews or wonton chips.

Top Tips

  • This Asian salad can be made with or without chicken! It’s up to you. Vegans can substitute chicken for tofu and tempeh.
  • To avoid soggy vegetables or wonton chips, you can make this chicken teriyaki salad the day before.
  • If you are packing this lunch and want to make the dressing ahead of time, I suggest replacing the romaine lettuce and cabbage with the Wonton chips.
  • If the dressing is kept in an airtight container with a lid and sealed properly, it can be prepared up to two days in advance. Before using, shake or whisk it up.

This light and crunchy Asian Chicken Salad can be served as a side dish or main course with an Asian dressing. It is healthy, light and full of flavour. For the perfect combination of flavour and texture, top it with crispy wonton crackers.


Teriyaki Chicken

  • 1/4 cup teriyaki sauce
  • 3 Chicken thighs Skinless and boneless


  • 1/4 cup Extra virgin olive oil
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Maple syrup or honey
  • 1/2 teaspoon Chili flakes Optional
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated

For the Salad:

  • 2 Hearts of romaine lettuce Chop
  • 1 cup Red cabbage Shredded
  • 1 red bell pepper thinly sliced
  • 1 cup Carrots julienned
  • 4 Green onions Thinly sliced
  • 1/4 cup cilantro
  • 1/4 cup roasted cashews
  • 1/2 cup Fried wonton chips


Teriyaki Chicken

  • Marinate the chicken for 30 minutes in teriyaki.
  • Heat a little oil in a large skillet. Cook the chicken on medium heat until it is charred and reaches 165-170°F (74°C). Cut the chicken into small pieces and remove it from the grill or pan.


  • Mix all ingredients together in a bowl. Screw the lid on and shake it well.

For the Salad:

  • Chop the vegetables! Cut the romaine hearts into small pieces, shred the red and green cabbages, chop the cilantro finely, and then thinly slice the carrot or julienne it.
  • Combine the chicken and vegetables in a bowl. Toss with the dressing.
  • Just before you serve, top with cashews or wonton chips.


  • Storing – Store leftover salads in the refrigerator for at least 2 days. To prevent the salad from becoming mushy, it is best to keep it separate from the dressing. Because of the high water content of vegetables, it is not recommended to freeze them. This will cause the salad to lose its texture and result in soggy vegetables after thawing.
