Ingredients

  • 1 head cauliflower cut into florets
  • 2 tsp. curry powder
  • 1 tsp. Kosher salt split into
  • 1/2 tsp. ground cardamom
  • 1/2 tsp. turmeric
  • 1/2 tsp. black pepper
  • 3 Tbsp. olive oil, divided
  • 1/2 cup of salted cashews that have been roasted
  • 1 medium onion diced
  • 5 cloves of garlic chopped
  • 2 tsp. minced fresh ginger
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 cup of whole milk Greek yogurt
  • Cilantro leaves for garnish

Instructions

  • Cut the cauliflower into 1 cup of small florets. keep the remaining cauliflower florets in a bowl.
  • Mix curry powder with 1/2 teaspoon salt, cardamom powder, turmeric, and pepper.
  • 2.25 tablespoons oil in a Dutch oven at medium temperature. Incorporate 1 cup cauliflower florets and 1 teaspoon mix of spices.
  • Cook with a stirring every now and then until cauliflower is lightly brown approximately 3 minutes. Add cashews and cook for another 2 minutes. Remove from the pan with the slotted spoon. Set aside.
  • Add the remaining 1 teaspoon oil to the pan along with onion and the remaining spice mix. Cook with stirring
  • periodically, until onions are soft, approximately 6 minutes. Add ginger and garlic and cook for 2 minutes.
  • Add the rest of the cauliflower along with coconut broth and milk.
  • Bring to a boil then cover and cook until the cauliflower is tender around 20 minutes.
  • Blend soup with an immersion or a regular blender. Blend into yogurt.
  • Serves can be garnished with cilantro, cashews, cauliflower florets, and reserved cauliflower.
