Shrimp Macaroni Salad has become a summer favourite around here. I make at least one pasta salad each week during the warmer months, to go with grilled meats or to take to friends’ homes.

- Salad Shrimp These small shrimp are often called “salad shrimp”, and they make a great pasta salad. They are small and slightly larger than elbow macaroni noodles. Pre-cooked frozen varieties are my favourite, but canned shrimp can be used.
- Elbow Macaroni What macaroni salad is complete without elbow noodles? This salad can be made with any short pasta, but I prefer elbows.
- Vegetables: Sliced red onion, celery and bell pepper give the salad a crunch, colour and flavour. You can use any colour you want, but I used red and yellow bell peppers.
- Mayonnaise and Sour Cream: The base of this shrimp pasta salad dressing recipe is mayonnaise. Mix half and half with sour milk. Plain Greek yoghurt can be substituted for the sour cream, but make sure both creamy mixers contain full fat. Low-fat mayo and low-fat sour cream will not give you the same taste and creaminess.
- Dijon Mustard A single tablespoon of Dijon can make this dressing delicious.
- Lemon Juice This thins out the creamy dressing and brightens all the flavours.
- Fresh Dill: Fresh daill goes well with almost any type of seafood and fish. It is a staple ingredient in my pasta salads. You should find fresh dill at your local grocery store. You can also use dried dill, but it’s better to use 2 teaspoons than 2 tablespoons.

How To Make Shrimp Pasta Salad
- Cook the Pasta Follow the instructions on the package for how to cook elbow macaroni. Don’t overcook the pasta. Drain the pasta and rinse it with cold water after you’re done cooking.
- Prepare the dressing: While pasta is cooking, combine the mayo and sour cream with the lemon juice, salt, and dill in a small bowl.
- Combine everything: Add cooked pasta, shrimps, diced celery, onion and bell peppers to a large bowl. Mix the dressing and stir well.
- Serve: This salad is ready when you stir it. However, I prefer it to be chilled for at least 30 minutes before it goes into the oven.
Shrimp Pasta Salad
Shrimp Pasta Salad can be prepared in less than half an hour and is the perfect creamy seafood macaroni recipe for a summer barbecue.
- 3 cups elbow macaroni pasta (or any small-shaped pasta) – 12 oz./340g
- 1 lb frozen pre-cooked salad shrimp, thawed, and drained. See note 1
- 1 cup chopped celery
- 1 bell pepper diced
- Finely chopped 1/2 small red onion
- 1/3 cup mayonnaise full-fat
- 1/3 cup plain Greek yoghurt or sour cream
- 1 tablespoon Dijon mustard
- Freshly squeezed 1 teaspoon of lemon juice
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Large mixing bowl
- Follow the instructions on the package to cook macaroni in salted boiling water. Most small pasta can be prepared in between 10-12 minutes. To stop the cooking process, drain and rinse under cold running water.
- While the pasta is cooking, prepare the dressing. In a bowl combine mayo, sour cream and lemon juice. Season with salt, pepper, and dill. Mix well.
- Combine the pasta, small salad shrimps, celery, bell pepper and red onion in a large bowl. Give the salad a good stir and then give it a final stir. If desired, garnish with fresh dill.
- Cover and chill the dish until ready to serve.
- This recipe calls for 150 to 200 ounces of shrimp per pound. Canister salad shrimp can be used, provided they have been drained and rinsed. You can use larger shrimp by cutting them into bite-sized pieces.
- This recipe has a spicy kick from red onions. If you prefer, sweet or green onions can be substituted. The ice water can be used to remove the red onion bite from the salad.
- You can also chop up other fresh vegetables like carrots and add them to your shrimp pasta salad. This recipe can also be made with chopped hard-boiled eggs, sliced green tomatoes, and shredded cheese.
- To make the dressing, use full-fat mayo, sour cream, or yoghurt. Miracle Whip and similar salad dressings are also not recommended.
- Fresh dill is the best. However, if you don’t have fresh dill, you can use 2 teaspoons (not two tablespoons) of it. You can also use dried dill weed.
- How to Store: Remaining leftovers can be kept covered in the fridge for up 3 days. This salad should not be left out at room temperature, or for too long on a hot day. It is best to keep the salad refrigerated at all costs.
- Make ahead: You can make the salad up to two days in advance, but only use half the creamy dressing. Keep the rest in a separate container. Stir in the remaining dressing just before serving so it tastes fresh!
