Chicken breasts I like them to be a little pound so that they are a uniform thickness, but not too thin. They are also more tender and juicy when pounding. You can choose skinless or boneless chicken breasts.

All-purpose flour – When you coat the chicken with flour before cooking, it gives the breasts a golden crust. This gives the sauce something to stick onto while it is being served.

Baby spinach – While regular spinach can be used, baby spinach is an excellent choice because they are small enough to eat a little bit of everything while enjoying your meal. Baby spinach is also tenderer than regular spinach.

Sun-dried tomatoes I prefer sun-dried tomatoes in a glass jar packed in oil. You can substitute the dried tomatoes for those that are not available in a jar.

Chicken stock- The cream and the stock are what make the sauce creamy and delicious. Low sodium stock is best to control the sauce’s saltiness.

How To Make Tuscan Chicken Recipe

The breasts should be pounded. Season with salt and pepper. Finally, dredge in flour.

Cook the breasts on each side for approximately 4 minutes. Set aside.

Mix the butter, minced garlic, 1 1/2 tablespoons flour, and the rest of the stock in a saucepan—cook on high for 45 seconds. Stir in the stock and oregano. If desired, you can also add halved cherry tomato halves to the garlic.

Reduce the heat to a simmer, then add the cream and parmesan cheese. Stir until well combined.

Stir in the sun-dried tomatoes, and spinach, and simmer until tender.

Serve the chicken in a pan.

Ingredients

  • 4 breasts of chicken pounded to an even thickness
  • 1/4 cup flour plus one tablespoon
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 Tbsp olive oil
  • 4 Tbsp butter
  • 4 cloves minced garlic
  • 3/4 cup chicken broth
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 2 cups baby spinach
  • 1 teaspoon oregano
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  • To make the chicken breasts even in thickness, pound them until they measure about 12 inches. Season with salt and pepper and then dredge in flour.
  • Heat the butter and half of the oil in a large skillet on medium heat. Cover the skillet with two chicken breasts once it is hot. Cook for approximately 4 minutes per side. Once done, the chicken should be golden brown. Transfer the cooked chicken breasts to a plate. If necessary, wipe the pan clean.
  • Reduce heat to medium-low and add two more tablespoons of butter to the saucepan. After the butter has melted, add the minced garlic and one tablespoon of flour to the pan. Cook for approximately 45 seconds while stirring continuously. Finally, whisk in the chicken stock. Once the sauce has been reduced, stir in cream, parmesan cheese, and sun-dried tomatoes.
  • Once the mixture has come to a simmer, add the spinach. Cook until the spinach is wilted. Stir as necessary. Once the chicken is browned, return it to the pan and heat through. Pour sauce over the top of the chicken, then serve.
